Julie Cox, Owner
Julie comes from a long tradition of females at the Beaufield Mews; started originally by her Grandmother Go-Go in 1948 her mother Jill took over in the eighties, and Julie then followed her to be the third generation at the Beaufield Mews. Keeping with the Antique, old worlde atmosphere, Julie seeks out slightly quirky ideas to add a dimension to dining out.

John Hoade, Wine buyer
Keeping it in the family, John is married to Julie and joined the Mews in summer 2006. John has a long background in wine having previously worked for various wine merchants throughout Dublin, whilst studying for his Wine Diploma. He opened his own retail business “The Grape Escape” in Lucan in 2002 and four years later sold it on. He now acts as the Wine and Beverage buyer and is only too delighted to host wine tasting with clients! Join up to his wine club and hear all the latest news & gossip in the wine world.

Derval Hooper, Head Chef
Starting out as a commis chef in a male dominated industry, Derval managed to prove early on at the Mews that she is well capable of holding her own. After a short spell working her way round Australia, she returned to take up the position of Head Chef at the Beaufield Mews; little did she know that a career of 20 years at the helm lay ahead of her. She recently completed her Bachelor of Culinary Arts in 2008 and continues to approach her cuisine with flair and enthusiasm.

Colm Wyse, Sous Chef
Colm has been a constant source of inspiration for the kitchen team. Always enjoying new ways of cooking, his days off are spent visiting new restaurants or sourcing the latest novel ingredient. His recipes are met with intrique, (pineapple & chilli ice cream) but always well received, unlike his terrible taste in music! He is currently studying for his Bachelor of Culinary Arts.

Tuathla O’Brien, Event Organiser
Along with a degree in Event Management, Tuathla has gained considerable event and hospitality experience working on projects stretching from Dublin, Cannes to Dubai. Her enthusiasm and attention to detail will put you at ease whatever the vision for your occasion. Tuathla’s addiction to exploring new ideas and food fashions mimic’s her eclectic mix of hobbies, however being a regular gym goer is enough for now!

Mark Colfer, Restaurant Manager
Mark is a relative new comer to the Beaufield Mews joining the team 2 years ago. With a vast wealth of hospitality experience behind him, he enjoys nothing better than to have a happy, busy restaurant full of contented customers.

Paddy Rice, Head Waiter
April 2009 was a marvellous month for Paddy as he served his one millionth Beaufield Mews customer! Always with a smile and a bit of craic, Paddy ensures that all guests feel completely at ease when they enter the door. Over 40 years on and still as bright & fresh as the day he started, Paddy never stops working; accept on occasion to watch his beloved Laois fail at football!
